1/2 head cauliflower, chopped into small pieces2 Tbsp peanut oil1 tsp cumin seed (more or less to taste)1/2 red onion, chopped finely1 tsp sweet curry1/2 tsp hot currysalt and pepper to taste1/4 cup (or to taste) fresh cilantro, chopped

1 fresh lime, quartered

Use a large frying pan or skillet which will hold all the cauliflower in a single layer. Preheat the pan for 30 seconds over medium-high heat, then add oil and heat about 1 minute.

Add cumin seeds and saute 30 seconds, then add your onion, cauliflower, curry powders, salt and pepper and cook 6-8 minutes, stirring only occasionally so the onion caramelizes and the cauliflower gets slightly browned.

Add most of chopped cilantro and stir, remove from heat and serve. Top with the rest of the cilantro and serve with lime quarters.
